Ingredients

Dressing
1tbsprice vinegar
1tspsesame oil
1 tsplight soy sauce
1 tspgrated ginger
1tsplime juice
1tspchilli flakes
2tspfresh coriander leaves
1/2tspsugar
Instructions
In a small bowl mix all the Dressing ingredients, leave to rest for 10-15 min.
Peel and cut the cucumber into cubes or small sticks.
Pour the dressing over the cucumber and mix thoroughly. Cover with cling film and refrigerate for 15-30 minutes before serving.
