Traditional Greek spinach and cheese savoury pastry, consisting of pancake layers instead of thin pastry sheets (phyllo), filled with spinach and feta cheese.

Ingredients

250gspinach
100gwild rocket
150gfeta cheese
150gcottage cheese
1egg
1onion
2-3tbspolive oil
2tbspparsley
4slicesKasseri or similar semi-hard cheese of your choice
salt, black pepperto taste
Instructions
Fry the onion in olive oil until translucent
Pour hot water over the washed spinach and wild rocket to wilt them. Drain well and chop.
In a large bowl, mix together feta and cottage cheese, egg, spinach, wild rocket, and fried onions. Add chopped parsley and season with salt and black pepper.
Grease the baking dish with oil. Begin by adding 3 pancakes to cover the bottom of the dish completely, then spread a thin layer of the spinach mixture over them. Repeat this process three more times. For the second and third pancake layers, add two pancakes each time. Finish with a layer of 3 pancakes on top.
Cover with aluminium foil, leaving a small opening on each side. Bake at 200°C for about 20 minutes.
Remove from the oven for the last 5 minutes, add grated cheese or cover with cheese slices, and return to the oven until the cheese melts.
