Instructions
Prepare the dough: In a bowl, mix flour, baking powder, and oregano. Make a well, add oil, then pour in warm water. Stir with a fork until combined, then knead by hand until smooth. Rest for 20-30 minutes. The dough will not rise.
Shape the dough: Divide the dough into 12 small balls. Flatten and roll each ball into a thin circle (3-4mm thick). Place each circle into a muffin tin.
Pre-bake the dough: Bake in a preheated oven at 200°C for 3 minutes. Press down any puffed dough with a spoon. Add tomato sauce of your choice.
Add toppings: Fill with your favourite toppings (e.g., peppers, cheese, olives, ham, etc.) and bake until cheese is melted and bubbly.
Bake: Place the filled pizza cupcakes in the oven at 200°C and bake for 5-7 minutes, until the cheese melts and toppings are heated. Remove from the muffin tin immediately to prevent the dough from becoming soggy. Once slightly cooled, transfer them to cupcake paper holders for a neat presentation.
