Ingredients

150grice noodlesthick and thin vermicelli mix
FOR THE PASTE
1onion
3garlic cloves
1lemongrass stalk
1piecefresh gingerabout 3 cm

1green chilli
1tspchilli flakes
1/2tspshrimp pasteor 2 salted anchovies
OTHER
1chicken stock cubedissolved in ~700ml water
200mlcoconut milk
1tspfish sauce
2tspcurry powdermild or hot
1tbspbrown sugar
2-3tbspfresh coriander leaves
1limejuice
salt, pepperto taste
sunflower oilfor frying
GARNISH
1fresh chilli, sliced
1-2spring onion, sliced
Instructions
Prepare toppings: Boil the eggs until hard, then peel and slice into halves or wedges. Cook the noodles and toss with a little oil to prevent sticking. Pan-fry cubed tofu until golden, or rinse tofu puffs under hot water to remove excess oil.
Make the spice paste: Blend all paste ingredients in a blender or food processor until smooth.
Make the broth:Heat a few tbsp of sunflower oil in a saucepan and sauté the spice paste for 3–4 minutes. Add the chicken broth, fish sauce, curry powder and half the coriander. Simmer for 5 minutes, then stir in the coconut milk.
Finish: Add the prawns, lime or lemon juice, and sugar. Simmer for 3–4 minutes, or 1 minute if using pre-cooked prawns. Season with salt and black pepper to taste.. Stir in the bean sprouts and remaining coriander during the final minute of cooking.
Assemble and serve:Place noodles in deep bowls and add tofu. Ladle the hot soup over the top, then add one egg per bowl, halved or cut into wedges.Garnish with chopped fresh chilli and spring onion. Serve immediately.
