Classic Mediterranean spread, perfect for summer afternoon snack.


  • 200g black pitted olives
  • 2-3 anchovies
  • 3 thick slices of baked aubergine
  • 2 cloves of garlic
  • 1/2 tsp rosemary
  • olive oil
  • pinch of black pepper


Add all ingredients in a small blender and slowly pour olive oil until you get a smooth paste. If the blender doesn’t have a small opening then just add olive oil to the rest of the  ingredients and blend it all together. Enjoy it spread over slice of bread of your choice.
