Ingredients:

  • 2 chicken breasts
  • olive oil
  • 1 onion
  • 3 cloves of garlic
  • 1 Tbsp paprika
  • 2 tsp cumin
  • 1 Tbsp ginger paste
  • 1 tsp cinnamon
  • pinch of saffron
  • 450g chopped tomato
  • 1 chicken cube
  • 4 carrots
  • 1/2 cup raisins
  • 1/2 cup green olives
  • 2-3 Tbsp lemon juice
  • 2 Tbsp parsley
  • salt, pepper to taste

Preparation:

1.  Cut chicken breast into small pieces, season with salt and pepper. In a medium size pot add oil and fry chicken pieces together with chopped onion for about 7 minutes.
2.  Now add garlic, cumin, paprika, ginger, cinnamon and mix well, fry for another 2 minutes.
3.  Pour 800-1000 ml of water, add chicken cube, olives cut in half, raisins and chopped or sliced carrots. Leave to cook on medium heat for about 30 minutes.
4.  Half way cooking add chopped tomato. Add salt and pepper to taste.
5.  In the last 5 minutes of cooking add chopped parsley, saffron.
6.  When done add lemon juice and honey (optional) and mix well.
7.  Serve with couscous or rice.
