Simple Chinese style fried chicken, delicious and crispy!

Ingredients:

  • 500g chicken breast
  • 1 egg yolk
  • 2 tsp ginger paste
  • 1 Tbsp water
  • 1 Tbsp soy sauce
  • 1 Tbsp rice wine
  • 3 tsp cornstarch
  • oil

Sauce

  • 80ml lemon juice
  • 2 Tbsp water
  • 2 Tbsp sugar
  • 1 Tbsp rice wine
  • 2 tsp cornstarch + 1 Tbsp water
  • spring onion

 

Preparation:

1. Cut chicken breast into thin strips and season with salt
2. In a cup beat egg yolks, add water, rice wine, cornflour, ginger and mix. Pour over chicken and leave it to rest 10-15 min.
3. Mix flour and extra cornstarch on a plate.
4. Flour each piece of chicken and shake off excess flour.
5. Heat some oil in a wok and when very hot add chicken pieces in batches. Fry for about 4 minutes, make sure you turn the pieces. Don’t put all chicken at once as there will be too much liquid and the chicken will not be crispy.

Lemon sauce
1. In a small pan add lemon juice, water, sugar and rice wine and slowly heat it up.
2. In a small glass add cornstarch and water and mix with a fork. Add to lemon mixture and stir. Cook on low heat for couple of minutes until clear and thick as syrup.
3. Pour over chicken pieces or use it as a dip.
4. Chop some spring onion and sprinkle over chicken.
