Two years ago i planted some courgette seeds in couple of large pots in my back garden. I did not expect it to take off, considering the poor weather at the time and i also forgot to water them often. But after 3-4 months i got some wonderful and healthy looking veg. From what i remember there were only 3-4 courgettes in total but it was worth waiting to try my very own organic courgettes. I always shop in Waitrose, it is more expensive than other supermarkets but they do offer the best quality food in my opinion, also they have a rather large organic range. From what i learnt courgettes don’t require much care to grow, but water is essential considering they are from the same family as cucumber (Cucurbitaceae) and contain a high percentage of water.
I like courgettes fried, grilled, stuffed with onions and bacon, added to hearty soups, stewed with aubergine, potato and peppers as a yummy side dish or main vegetarian dish.
For simple grilled courgettes; slice them whatever way you want, the best thickness is 7-8mm, placed them on a large plate, sprinkle salt and leave it for 15-20 min for water to come out. Then squeeze them between hands and dip in flour/egg mixture and fry them or you can brush them with some olive oil and grill them.
