Preparation:

1.   Mix well all ingredients for meatballs. Shape small meatballs then shallow fry for 2-3 minutes, drain and put on a side.

2.   You can prepare in a proper tagine dish but also in a large pot. heat oil and fry chopped  onion and garlic for 2-3 minutes, add meatballs, chopped tomatoes and stock. Mix well. 

3.   Add sliced carrot i spices, tomato puree, honey olives and pickled lemon or lemon zest.

4.   Cook for 40 minutes on medium heat. IN the last 10 minutes add sliced or chopped  courgette. If sauce is too thick add little bit of water.

Serve with couscous.

Ingredients

  • 500g lamb mince
  • 1 onion
  • 2 carrots
  • 1 courgette
  • 2 cloves of garlic
  • 450 chopped tomato
  • 1/3 cup olives, sliced
  • 1/3 cup olive oil
  • 1 pickled lemon or lemon zest
  • 250ml veg or lamb stock
  • 2 Tbsp honey

Spices:

  • 2 Tsp paprika
  • 2 Tsp turmeric
  • 1/2 Tsp cumin
  • 1/2 Tsp cayenne pepper
  • 1/2 tsp cardamom
  • 1 tsp ginger (powder, paste or one small peace of fresh ginger)
  • pinch of saffron
  • 1 Tbsp coriander seed ( crushed or in powder)
  • 2 Tbsp fresh coriander leaves, chopped
